With the decline in physical activity and the high incidence of obesity and diabetes, public health issues affecting the world, it is necessary to reduce the consumption of calories, said nutritionist Sylvia Melendez-Klinger, representative of the Global Stevia Institute.
An alternative to this is the use of stevia natural sweetener produced from the plant of the same name, discovered in Paraguay over 100 years ago and since 1970 is marketed in Japan, the specialist said.
Among the benefits of stevia is their zero caloric intake, ie, intake calories the body does not produce as this not easily digested and discarded in the urine, so it is not retained in the body.
In a cooking demonstration, said that stevia is a safe substance that does not cause tooth decay, and creates allergies and can be consumed by the general population as well as children, pregnant women or women who are lactating and patients diabetes and cancer, Meléndez-Klinger noted.
The extracts of stevia, he said, are up to 300 times sweeter than sugar and are aids in weight control and obesity reduction, since small amounts are needed to sweeten foods.
According to the nutritionist, people should consider that with increasing age, the human body metabolism decreases, so that they must reduce their caloric intake daily.
Stevia is a shrub in the sunflower family whose culture is also beneficial for the environment, it requires less space, less energy and less water.
Sweetener production is similar to the tea, which involves drying of the leaves and different filters to extract its purest form.
Globally, the leading countries in the production of stevia are China, Paraguay, Kenya and the United States; in Mexico, the Federal Commission for Protection against Health Risks (Cofepris) authorized its use since 2008.
